Place a pot of water on the stove and bring to a boil. Once boiling lower heat to a simmer (app 80°C). Place the frozen vacuum-sealed bags in the water for 15 minutes (Do not open the bags. Do not cover the pot with a lid). Carefully remove the bags from water. Using scissors, carefully remove the fish from the bag, and pat dry with clean kitchen paper. Lightly salt. Place a pan or grill on the stove, add butter or olive oil, when hot place the fish on the pan or grill and sear each side for 30 seconds. Open the remaining bags, place the fish, sides and sauce on a plate and serve immediately.
